Yes, it's Monday. Yes, it's the start of a long week. But tonight I decided to make some banana-walnut-chocolate chip muffins. I have also started to pack for my trip to Florida (I leave this week to be in my cousin's wedding). So, I guess the day is coming to a pretty nice end.

ReplyDeleteSo for this recipe I kind of cheated. I took a "Jiffy" muffin mix, (banana flavored) I like this mix because there are limited artificial ingredients and it's pretty plain. I then added 1/3 cup of milk, 1 egg, I mashed banana, some cinnamon & vanilla (both of which I "eye-balled"). The batter made 8 muffins. Then I crushed some walnuts and sprinkled them on top of each muffin with some semi-sweet chocolate chips! Bake in the oven at 395 degrees (I do it slightly lower than the recommended temp) for 12 minutes and VOILA! Everyone at my house enjoyed them right out of the oven for desert and John enjoyed 2 the next day as a nice afternoon snack at work (hand delivered by yours truly).
